Ingredients

  • 4 salmon fillets (about 5 oz each)
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil or butter
  • 3 cloves garlic (minced)
  • 2 cups fresh spinach (or frozen, thawed and drained)
  • 1 cup heavy cream
  • 2 oz cream cheese
  • 1/4 cup grated Parmesan
  • Salt & pepper to taste
  • Lemon wedges (for serving)
  • Chopped parsley (for garnish)

Instructions 

  • Pat salmon dry and season both sides with Cajun seasoning, salt, and pepper.
  • Heat olive oil or butter in a skillet over medium-high heat.
  • Sear salmon fillets for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  • In the same pan, reduce heat to medium and add minced garlic. Sauté 30 seconds until fragrant.
  • Stir in heavy cream, cream cheese, and Parmesan until melted and creamy.
  • Add spinach and cook 2–3 minutes until wilted and sauce thickens.
  • Return salmon to the skillet, spooning sauce over the top.
  • Simmer 1–2 minutes, then garnish with parsley and lemon wedges before serving.
