A restaurant-quality keto salmon dinner with a Cajun kick! Perfectly seared salmon fillets coated in bold spices, served with creamy garlic spinach — rich, satisfying, and low-carb.
- 4 salmon fillets (about 5 oz each)
- 1 tbsp Cajun seasoning
- 2 tbsp olive oil or butter
- 3 cloves garlic (minced)
- 2 cups fresh spinach (or frozen, thawed and drained)
- 1 cup heavy cream
- 2 oz cream cheese
- 1/4 cup grated Parmesan
- Salt & pepper to taste
- Lemon wedges (for serving)
- Chopped parsley (for garnish)
Pat salmon dry and season both sides with Cajun seasoning, salt, and pepper.
Heat olive oil or butter in a skillet over medium-high heat.
Sear salmon fillets for 3–4 minutes per side until golden and cooked through. Remove and set aside.
In the same pan, reduce heat to medium and add minced garlic. Sauté 30 seconds until fragrant.
Stir in heavy cream, cream cheese, and Parmesan until melted and creamy.
Add spinach and cook 2–3 minutes until wilted and sauce thickens.
Return salmon to the skillet, spooning sauce over the top.
Simmer 1–2 minutes, then garnish with parsley and lemon wedges before serving.
