Ingredients

  • 1 lb chicken tenders (skinless, boneless)
  • 1 cup crushed pork rinds
  • ½ cup grated parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 large eggs

Instructions 

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Crush pork rinds into fine crumbs.
  • Combine pork rinds, parmesan, paprika, garlic powder, onion powder, salt, and pepper.
  • Beat eggs in a separate bowl.
  • Dip chicken tenders in egg, then coat in pork-rind mixture.
  • Place on prepared baking sheet.
  • Bake 20–22 minutes until crispy and cooked through.
  • Rest briefly before serving.
