- 2 cups almond flour
- 2 tbsp coconut flour (optional, for texture)
- 2 tbsp powdered erythritol or monk fruit sweetener
- 4 large eggs
- ½ cup unsweetened almond milk
- 4 tbsp melted butter (or coconut oil)
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Preheat your waffle maker.
In a bowl, whisk almond flour, coconut flour, sweetener, baking powder, and salt.
In another bowl, whisk eggs, almond milk, melted butter, and vanilla.
