Ingredients

  • 2 cups almond flour
  • 2 tbsp coconut flour (optional, for texture)
  • 2 tbsp powdered erythritol or monk fruit sweetener
  • 4 large eggs
  • ½ cup unsweetened almond milk
  • 4 tbsp melted butter (or coconut oil)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions 

  • Preheat your waffle maker.
  • In a bowl, whisk almond flour, coconut flour, sweetener, baking powder, and salt.
  • In another bowl, whisk eggs, almond milk, melted butter, and vanilla.
  • Combine wet and dry ingredients, mixing until smooth.
  • Lightly grease waffle maker and pour in batter.
  • Cook 3–5 minutes until waffles are golden and crisp.
  • Serve hot with desired toppings.
