A smoky, cheesy, low-carb BBQ chicken casserole that’s creamy, satisfying, and ridiculously easy to make — perfect for weeknights or meal prep.

Ingredients

  • 3 cups cooked shredded chicken
  • 4 oz cream cheese (softened)
  • ½ cup sour cream
  • ½ cup sugar-free BBQ sauce
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 2 tbsp butter
  • 2 cloves garlic (minced)
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 4 slices cooked bacon (crumbled)
  • 2 green onions (sliced)

Instructions 

  • Preheat oven to 375°F and grease a medium casserole dish.
  • In a skillet, melt butter and sauté garlic for 1 minute until fragrant.
  • Add cream cheese, sour cream, BBQ sauce, paprika, and onion powder. Stir until smooth and creamy.
  • Add shredded chicken and half of the cheddar; mix until fully coated in sauce.
  • Transfer the mixture into the casserole dish and top with remaining cheddar cheese.
  • Bake for 20 minutes or until hot and bubbly.
  • Remove from oven, top with crumbled bacon and green onions, and serve warm.
