A smoky, cheesy, low-carb BBQ chicken casserole that’s creamy, satisfying, and ridiculously easy to make — perfect for weeknights or meal prep.
- 3 cups cooked shredded chicken
- 4 oz cream cheese (softened)
- ½ cup sour cream
- ½ cup sugar-free BBQ sauce
- 1 cup shredded cheddar cheese (plus extra for topping)
- 2 tbsp butter
- 2 cloves garlic (minced)
- ½ tsp smoked paprika
- ½ tsp onion powder
- Salt and pepper to taste
- 4 slices cooked bacon (crumbled)
- 2 green onions (sliced)
Preheat oven to 375°F and grease a medium casserole dish.
In a skillet, melt butter and sauté garlic for 1 minute until fragrant.
Add cream cheese, sour cream, BBQ sauce, paprika, and onion powder. Stir until smooth and creamy.
Add shredded chicken and half of the cheddar; mix until fully coated in sauce.
Transfer the mixture into the casserole dish and top with remaining cheddar cheese.
Bake for 20 minutes or until hot and bubbly.
Remove from oven, top with crumbled bacon and green onions, and serve warm.
