Heat olive oil in a large skillet over medium-high heat.
Add chicken pieces and sear for 4–5 minutes until browned. Remove and set aside.
Add sliced sausage to the skillet and cook until lightly browned.
Add onion and bell peppers and cook for 4–5 minutes until softened.
Stir in garlic and cook for 30 seconds until fragrant.
Add Cajun seasoning, smoked paprika, salt, and black pepper.
Pour in chicken broth and scrape up any browned bits from the pan.
Return chicken to the skillet and simmer for 5–7 minutes until cooked through and glossy.
Taste and adjust seasoning before serving.
