Ingredients

  • 1 lb boneless (skinless chicken thighs)
  • 12 oz smoked sausage (sliced)
  • 1 tbsp olive oil
  • 1 small yellow onion (sliced)
  • 1 green bell pepper (sliced)
  • 1 red bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 2 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup chicken broth

Instructions 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken pieces and sear for 4–5 minutes until browned. Remove and set aside.
  • Add sliced sausage to the skillet and cook until lightly browned.
  • Add onion and bell peppers and cook for 4–5 minutes until softened.
  • Stir in garlic and cook for 30 seconds until fragrant.
  • Add Cajun seasoning, smoked paprika, salt, and black pepper.
  • Pour in chicken broth and scrape up any browned bits from the pan.
  • Return chicken to the skillet and simmer for 5–7 minutes until cooked through and glossy.
  • Taste and adjust seasoning before serving.
