A cheesy, taco-flavored ground beef casserole that’s comforting, low-carb, and perfect for meal prep.
For the Taco Beef Base
- 1 lb ground beef
- 1 tbsp olive oil (if needed)
- 1/2 small onion (diced)
- 2 cloves garlic (minced)
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/¼ cup tomato sauce (sugar-free)
- 3 oz cream cheese
For the Cheesy Topping
- 1 1/2 cups shredded cheddar cheese
Optional Toppings
- Sour cream
- Diced avocado
- Jalapeños
- Green onions
- Cilantro
Preheat oven to 375°F.
Heat a skillet over medium heat and add olive oil if needed.
Sauté onion and garlic 2–3 minutes until softened.
Add ground beef and cook until browned.
Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper.
Add tomato sauce and cream cheese; stir until melted and combined.
Transfer mixture to a small baking dish.
Sprinkle cheddar cheese evenly on top.
Bake 12–15 minutes until cheese is melted and bubbly.
Let rest 5 minutes before serving with optional toppings.
