A cheesy, taco-flavored ground beef casserole that’s comforting, low-carb, and perfect for meal prep.

Ingredients

For the Taco Beef Base

  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1/2 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/¼ cup tomato sauce (sugar-free)
  • 3 oz cream cheese

For the Cheesy Topping

  • 1 1/2 cups shredded cheddar cheese

Optional Toppings

  • Sour cream
  • Diced avocado
  • Jalapeños
  • Green onions
  • Cilantro

Instructions 

  • Preheat oven to 375°F.
  • Heat a skillet over medium heat and add olive oil if needed.
  • Sauté onion and garlic 2–3 minutes until softened.
  • Add ground beef and cook until browned.
  • Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper.
  • Add tomato sauce and cream cheese; stir until melted and combined.
  • Transfer mixture to a small baking dish.
  • Sprinkle cheddar cheese evenly on top.
  • Bake 12–15 minutes until cheese is melted and bubbly.
  • Let rest 5 minutes before serving with optional toppings.
