Tender chicken simmered in a rich creamy tomato curry sauce with warm Indian spices.

Ingredients

  • 1 1/2 lb chicken thighs or chicken breast (cubed)
  • 2 tbsp butter
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 tbsp grated ginger
  • 1 tbsp garam masala
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 cup tomato sauce
  • 3/4 cup heavy cream
  • Salt to taste
  • Fresh cilantro for garnish

Instructions 

  • Season chicken lightly with salt.
  • Heat butter in a large skillet over medium-high heat.
  • Cook chicken until browned on the outside, then remove temporarily.
  • Add onion and cook until softened.
  • Stir in garlic, ginger, garam masala, paprika, cumin, turmeric, and chili powder.
  • Cook briefly until fragrant.
  • Add tomato sauce and simmer for several minutes.
  • Stir in heavy cream and return chicken to the skillet.
  • Simmer until chicken is fully cooked and sauce thickens slightly.
  • Garnish with cilantro and serve hot
