Ingredients

Cookie Bites

  • 1.5 cups almond flour
  • 1/4 cup butter (softened)
  • 1/3 cup powdered sweetener
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt

Cinnamon “Sugar” Coating

  • 2 tbsp powdered sweetener
  • 1 tsp cinnamon

Optional Toppings

  • Extra coating dusted on top
  • A light sprinkle of powdered sweetener

Instructions 

  • Preheat oven to 350°F and line a baking sheet with parchment.
  • Mix almond flour, butter, powdered sweetener, egg, vanilla, cinnamon, and salt until a dough forms.
  • Roll dough into small bite-sized balls and place on the baking sheet.
  • Bake 10–12 minutes until set and lightly golden.
  • Mix powdered sweetener and cinnamon in a small bowl.
  • Roll warm cookie bites in the cinnamon “sugar” mixture.
  • Let cool completely before serving.
  • Add optional toppings if desired.
