Keto Creamy Pesto Chicken Casserole – a cheesy, comforting low-carb dinner with tender chicken, creamy pesto sauce, and a bubbly golden top.
- 2 lbs chicken breast (cut into bite-sized pieces)
- 1 cup sugar-free basil pesto
- 1 cup heavy cream
- 1 cup shredded mozzarella
- ½ cup grated parmesan
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt & pepper (to taste)
- Fresh basil for garnish
Preheat oven to 400°F. Grease a medium baking dish.
Add the chicken pieces to the dish and season with garlic powder, onion powder, salt, and pepper.
In a bowl, mix pesto with heavy cream until smooth.
Pour the creamy pesto mixture over the chicken and toss to coat evenly.
Top with mozzarella and parmesan.
Bake 22–25 minutes or until the cheese is golden and the chicken is fully cooked.
Let rest 5 minutes, then garnish with fresh basil.
