Ingredients

Soup Base

  • 2 tbsp butter
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 cups cauliflower florets
  • 3 cups chicken broth
  • 1 cup cooked shredded chicken
  • 1/2 cup heavy cream
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Finishing Ingredients

  • 1 cup fresh spinach
  • 2 tbsp cream cheese

Optional Toppings

  • Shredded parmesan
  • Fresh parsley
  • Cracked black pepper

Instructions 

  • Melt butter in a large pot over medium heat.
  • Add onion and celery; sauté 3–4 minutes until softened.
  • Add cauliflower florets, chicken broth, garlic powder, thyme, salt, and pepper.
  • Simmer 12–15 minutes until cauliflower is tender.
  • Add shredded chicken, heavy cream, and cream cheese. Stir until melted and smooth.
  • Add spinach and cook 1–2 minutes until wilted.
  • Taste and adjust seasoning.
  • Serve warm with optional toppings.
