A rich and comforting keto-friendly winter soup made with tender chicken, low-carb vegetables, and a silky, creamy broth—perfect for cold days and satisfying enough for a full meal.
Soup Base
- 2 tbsp butter
- 1/2 cup diced onion
- 1/2 cup diced celery
- 2 cups cauliflower florets
- 3 cups chicken broth
- 1 cup cooked shredded chicken
- 1/2 cup heavy cream
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Finishing Ingredients
- 1 cup fresh spinach
- 2 tbsp cream cheese
Optional Toppings
- Shredded parmesan
- Fresh parsley
- Cracked black pepper
Melt butter in a large pot over medium heat.
Add onion and celery; sauté 3–4 minutes until softened.
Add cauliflower florets, chicken broth, garlic powder, thyme, salt, and pepper.
Simmer 12–15 minutes until cauliflower is tender.
Add shredded chicken, heavy cream, and cream cheese. Stir until melted and smooth.
Add spinach and cook 1–2 minutes until wilted.
Taste and adjust seasoning.
Serve warm with optional toppings.
