A creamy, cheesy keto casserole made with ground beef, spinach, and rich alfredo sauce — perfect for meal prep.

Ingredients

For the Ground Beef Layer

  • 1.5 lb ground beef
  • 1 tbsp olive oil
  • 1/2 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning

For the Alfredo Sauce

  • 1 cup heavy cream
  • 4 oz cream cheese
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1/2 tsp garlic powder

Other Ingredients

  • 3 cups fresh spinach
  • 1 1/2 cups shredded mozzarella (for topping)

Instructions 

  • Preheat oven to 375°F.
  • Heat olive oil in a large skillet and sauté onion 2–3 minutes.
  • Add ground beef, garlic, salt, pepper, and Italian seasoning. Cook until browned; drain excess fat.
  • Add spinach to the skillet and cook 1–2 minutes until wilted.
  • In a saucepan, heat heavy cream and cream cheese until smooth.
  • Stir in mozzarella, Parmesan, and garlic powder until melted into a thick alfredo sauce.
  • Combine ground beef mixture with the alfredo sauce.
  • Transfer to a greased baking dish and top with mozzarella.
  • Bake 20–25 minutes until hot and bubbly.
  • Cool slightly and serve.
