Juicy oven-roasted chicken breasts with a fresh herb crust and savory pan juices — a clean, satisfying keto dinner.

Ingredients

  • 1.5 lb chicken breast
  • 3 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh parsley (chopped)
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary (finely chopped)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Lemon wedges (for serving (optional))

Instructions 

  • Preheat oven to 400°F.
  • Pat chicken breasts dry with paper towels.
  • In a bowl, mix olive oil, garlic, parsley, thyme, rosemary, salt, pepper, and garlic powder.
  • Rub the herb mixture evenly over the chicken breasts.
  • Place chicken in a skillet or baking dish.
  • Roast for 25–30 minutes until internal temperature reaches 165°F.
  • Remove from oven and rest 5 minutes, spooning pan juices over the chicken.
  • Serve with lemon wedges if desired
