Ingredients

Breakfast Bars

  • 1.5 cups almond flour
  • 1/3 cup powdered sweetener
  • 2 eggs
  • 3 tbsp butter (melted)
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp vanilla extract
  • 1/3 cup sugar-free dried cranberries
  • 1/4 cup chopped almonds
  • Pinch of salt

Optional Toppings

  • Extra chopped almonds
  • Extra cranberries
  • Cinnamon dusting

Instructions 

  • Preheat oven to 350°F and line a small baking dish with parchment.
  • Mix almond flour, sweetener, baking powder, cinnamon, nutmeg, ginger, and salt.
  • Add eggs, melted butter, and vanilla; stir until combined.
  • Fold in cranberries and chopped almonds.
  • Spread batter evenly into the baking dish.
  • Bake 18–20 minutes until set and lightly golden.
  • Cool completely, then slice into bars.
  • Add optional toppings before serving
