- 8 oz cream cheese (softened)
- 1 cup heavy whipping cream
- ½ cup fresh strawberries (pureed (plus extra for topping))
- ¼ cup powdered erythritol or monk fruit sweetener
- 1 tsp vanilla extract
Optional
- almond flour crumble or sugar-free whipped cream for garnish
In a mixing bowl, beat cream cheese until smooth.
Add sweetener, vanilla, and strawberry puree. Mix until combined.
In another bowl, whip heavy cream until stiff peaks form.
Gently fold whipped cream into the cream cheese mixture until fluffy.
Spoon mousse into serving glasses and chill for at least 30 minutes.
