Fresh, bright, creamy salmon salad wrapped in crisp lettuce leaves. A fast and ultra-low-carb lunch that’s perfect for meal prep.

Ingredients

  • 1 lb cooked salmon (flaked)
  • 1/3 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 1/2 tbsp fresh dill (chopped)
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 8-10 large lettuce leaves (romaine or butter lettuce)

Instructions 

  • In a bowl, mix mayonnaise, lemon juice, lemon zest, dill, garlic powder, onion powder, salt, and pepper.
  • Add flaked salmon and gently mix until fully coated.
  • Spoon filling into lettuce leaves.
  • Roll or fold to form wraps.
  • Serve or chill.
