A crispy keto cauliflower crust pizza topped with melted cheese and your favorite low-carb toppings. Gluten-free, low-carb, and delicious.

Ingredients

For the crust

  • 1 medium head of cauliflower (or 3 cups cauliflower rice)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp Italian seasoning
  • Salt & pepper (to taste)

For the toppings (example)

  • ½ cup sugar-free pizza sauce
  • 1 ½ cups shredded mozzarella
  • 12-15 slices pepperoni
  • Fresh basil (for garnish)

Instructions 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Steam or microwave cauliflower rice until tender. Let cool, then squeeze out as much water as possible using a clean towel.
  • In a bowl, mix cauliflower, mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper until combined.
  • Press mixture onto parchment into a thin round crust.
  • Bake 15–20 minutes, until golden and firm.
  • Spread pizza sauce over crust, sprinkle with mozzarella, and add toppings.
  • Return to oven for 8–10 minutes, until cheese is bubbly.
  • Garnish with fresh basil, slice, and serve.
