- 1 cup cottage cheese
- 4 large eggs
- 1 cup almond flour
- 1 tbsp psyllium husk (optional, for structure)
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ tsp garlic powder (optional)
- 1 tbsp olive oil or melted butter
Preheat oven to 350 °F.
Line a small loaf pan with parchment paper.
Blend cottage cheese until completely smooth.
In a bowl, whisk eggs, almond flour, baking powder, salt, and psyllium (if using).
Stir in blended cottage cheese and olive oil until smooth.
Pour batter into the loaf pan and smooth the top.
Bake for 35–40 minutes, or until golden brown and a toothpick comes out clean.
Let cool completely before slicing.
