A soft, fluffy, and protein-packed bread made with cottage cheese and eggs — perfect for keto, low-carb, and high-protein diets.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup almond flour
  • 1 tbsp psyllium husk (optional, for structure)
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp garlic powder (optional)
  • 1 tbsp olive oil or melted butter

Instructions 

  • Preheat oven to 350 °F.
  • Line a small loaf pan with parchment paper.
  • Blend cottage cheese until completely smooth.
  • In a bowl, whisk eggs, almond flour, baking powder, salt, and psyllium (if using).
  • Stir in blended cottage cheese and olive oil until smooth.
  • Pour batter into the loaf pan and smooth the top.
  • Bake for 35–40 minutes, or until golden brown and a toothpick comes out clean.
  • Let cool completely before slicing.
