A rich, creamy keto soup packed with seasoned ground beef, melted cheddar cheese, and a savory cream-based broth. All the comfort of a classic cheeseburger in low-carb soup form.

Ingredients

  • 1 lb ground beef
  • 4 cups chicken broth
  • 3/4 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 oz cream cheese (softened)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • Salt (to taste)

Instructions 

  • In a large pot or Dutch oven over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease if needed.
  • Add garlic powder, onion powder, black pepper, and salt. Stir to evenly season the beef.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Reduce heat to low and add the cream cheese, stirring until fully melted and smooth.
  • Stir in the heavy cream and simmer for 5 minutes.
  • Add shredded cheddar cheese gradually, stirring constantly until fully melted and incorporated.
  • Simmer for another 5–10 minutes until thick and creamy. Taste and adjust seasoning before serving.
