Scrambled eggs, ground beef, jalapeños, and melted cheddar.
- 6 oz ground beef (85–90% lean)
- 1 tbsp butter
- 3 large eggs
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 fresh jalapeño (seeded and diced)
- 1/2 cup shredded cheddar cheese
Heat 1 tbsp butter in a skillet over medium-high.
Add 6 oz ground beef, season with salt, pepper, and garlic powder, and brown fully.
Add diced jalapeño and cook 1–2 minutes.
Beat 3 eggs in a bowl and pour into the skillet.
Soft-scramble the eggs into the beef mixture.
Add 1/2 cup shredded cheddar and melt through.
Serve hot in a bowl.
