Ingredients

  • 6 oz ground beef (85–90% lean)
  • 1 tbsp butter
  • 3 large eggs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 fresh jalapeño (seeded and diced)
  • 1/2 cup shredded cheddar cheese

Instructions 

  • Heat 1 tbsp butter in a skillet over medium-high.
  • Add 6 oz ground beef, season with salt, pepper, and garlic powder, and brown fully.
  • Add diced jalapeño and cook 1–2 minutes.
  • Beat 3 eggs in a bowl and pour into the skillet.
  • Soft-scramble the eggs into the beef mixture.
  • Add 1/2 cup shredded cheddar and melt through.
  • Serve hot in a bowl.
