- 3 tbsp almond flour
- 2 tbsp unsweetened cocoa powder
- 2 tbsp powdered erythritol or monk fruit sweetener
- 1 large egg
- 2 tbsp butter or coconut oil (melted)
- ½ tsp vanilla extract
- ½ tsp baking powder
- Pinch of salt
Optional
- 1 tbsp sugar-free chocolate chips
In a microwave-safe mug, whisk together almond flour, cocoa powder, sweetener, baking powder, and salt.
Add egg, melted butter, and vanilla. Mix until smooth.
Stir in chocolate chips if using.
Microwave on high for 60–90 seconds until cake is set but still slightly soft in the center.
