Chicken Salad
- 1 cup cooked chicken (chopped)
- 2 tbsp mayonnaise

Lettuce Boats
- 4 romaine or butter lettuce leaves
Optional Toppings
- Extra cranberries
- Extra pecans
- Fresh parsley
