Classic low-carb deviled eggs with a smooth, creamy yolk filling and a clean, balanced flavor.
- 6 large hard-boiled eggs
- 3 tablespoons mayonnaise
- 1 teaspoon yellow mustard
- 1 teaspoon apple cider vinegar (or lemon juice)
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- Paprika (for topping)
- Chopped chives (optional)
Slice the hard-boiled eggs in half lengthwise and remove the yolks.
Place the yolks in a bowl and mash them until smooth.
Add mayonnaise, mustard, vinegar, salt, and pepper. Mix until creamy.
Spoon or pipe the filling back into the egg whites.
Top with a light sprinkle of paprika and optional chives.
Refrigerate 20 minutes before serving for best texture
