A refreshing keto Greek salad with crisp veggies, olives, and feta cheese. Low-carb, gluten-free, and perfect for a light yet satisfying lunch.
- 4 cups chopped romaine lettuce (or mixed greens)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (sliced)
- 1/2 small red onion (thinly sliced)
- 1/2 cup Kalamata olives
- 3/4 cup feta cheese (cubed or crumbled)
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 tsp dried oregano
- Salt & pepper (to taste)
In a large salad bowl, add lettuce, cherry tomatoes, cucumber, onion, and olives.
Add feta cheese on top.
In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
Drizzle dressing over salad and toss gently to combine.
Serve immediately, garnished with extra oregano if desired.
