A refreshing keto Greek salad with crisp veggies, olives, and feta cheese. Low-carb, gluten-free, and perfect for a light yet satisfying lunch.

Ingredients

  • 4 cups chopped romaine lettuce (or mixed greens)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (sliced)
  • 1/2 small red onion (thinly sliced)
  • 1/2 cup Kalamata olives
  • 3/4 cup feta cheese (cubed or crumbled)
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp dried oregano
  • Salt & pepper (to taste)

Instructions 

  • In a large salad bowl, add lettuce, cherry tomatoes, cucumber, onion, and olives.
  • Add feta cheese on top.
  • In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
  • Drizzle dressing over salad and toss gently to combine.
  • Serve immediately, garnished with extra oregano if desired.
