A savory, low-carb holiday stuffing made with toasted keto bread, browned sausage, herbs, and vegetables for the perfect Christmas or Thanksgiving side.

Ingredients

  • 6 cups cubed keto bread (toasted)
  • 1 lb ground sausage
  • 1/2 cup butter
  • 1 medium onion (diced)
  • 3 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth (low-sodium)
  • 2 large eggs
  • 1 tbsp fresh sage (chopped)
  • 1 tbsp fresh parsley (chopped)
  • 1 tsp fresh rosemary (minced)
  • 1 tsp fresh thyme leaves
  • Salt and pepper (to taste)

Instructions 

  • Preheat oven to 350°F. Grease a 9×13 baking dish.
  • Toast keto bread cubes on a baking sheet for 10–12 minutes until golden.
  • In a skillet, brown sausage over medium heat. Remove and set aside.
  • In the same skillet, melt butter and sauté onion, celery, and garlic until soft.
  • Mix toasted bread cubes, sausage, vegetables, and herbs in a bowl.
  • Whisk broth and eggs together, then pour over the mixture.
  • Toss gently until the bread absorbs most of the liquid.
  • Transfer to the baking dish and bake 30–35 minutes until golden on top.
