- 1 lb ground beef
- ½ lb ground pork
- 1 cup shredded cheddar cheese
- 2 fresh jalapeños (finely diced (seeds removed for mild heat))
- ½ cup almond flour
- 2 large eggs
- 2 tbsp sugar-free ketchup
- 1 tbsp Worcestershire sauce (or coconut aminos)
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
Glaze
- ¼ cup sugar-free ketchup mixed with ½ tsp smoked paprika and ½ tsp apple cider vinegar
Preheat oven to 350°F and line a loaf pan with parchment paper.
In a large bowl, mix beef, pork, almond flour, eggs, cheddar, jalapeños, ketchup, Worcestershire, and spices.
Shape into a loaf and place in prepared pan.
Spread glaze evenly over the top.
Bake for 45–55 minutes or until internal temperature reaches 160°F.
Rest 10 minutes before slicing.
