A juicy, cheesy, spicy keto meatloaf packed with jalapeños and melty cheddar — pure comfort food with a low-carb twist.

Ingredients

  • 1 lb ground beef
  • ½ lb ground pork
  • 1 cup shredded cheddar cheese
  • 2 fresh jalapeños (finely diced (seeds removed for mild heat))
  • ½ cup almond flour
  • 2 large eggs
  • 2 tbsp sugar-free ketchup
  • 1 tbsp Worcestershire sauce (or coconut aminos)
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Glaze

  • ¼ cup sugar-free ketchup mixed with ½ tsp smoked paprika and ½ tsp apple cider vinegar

Instructions 

  • Preheat oven to 350°F and line a loaf pan with parchment paper.
  • In a large bowl, mix beef, pork, almond flour, eggs, cheddar, jalapeños, ketchup, Worcestershire, and spices.
  • Shape into a loaf and place in prepared pan.
  • Spread glaze evenly over the top.
  • Bake for 45–55 minutes or until internal temperature reaches 160°F.
  • Rest 10 minutes before slicing.
