Ingredients

  • 4-5 lb prime rib roast (bone-in or boneless)
  • 1/2 cup softened butter
  • 4 cloves garlic (minced)
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • 1 tbsp fresh parsley (chopped)
  • 2 tsp salt
  • 1 tsp black pepper

Instructions 

  • Preheat oven to 450°F.
  • Pat the roast dry to help the crust form.
  • Season all sides generously with salt and pepper.
  • Mix softened butter with garlic, rosemary, thyme, and parsley.
  • Rub the garlic-herb butter over the entire roast.
  • Place roast on a rack inside a roasting pan.
  • Roast at 450°F for 20 minutes to develop color.
  • Reduce heat to 325°F and cook an additional 1–1.5 hours, or until internal temperature reaches 125°F for medium-rare.
  • Let rest for 20 minutes before slicing.
  • Spoon any melted herb butter from the pan over the slices when serving.
