Thin, crispy-edged beef patties stacked with melted cheese and finished with a thick, tangy special sauce. A simple, high-heat method creates strong texture contrast and concentrated flavor without the need for a bun.

Ingredients

  • 1 lb ground beef (80/20)
  • 4 slices cheddar cheese
  • 1 tbsp butter

Special Sauce:

  • 1/3 cup mayonnaise
  • 1 tbsp ketchup (sugar-free)
  • 1 tsp mustard
  • 1 tsp vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Optional:

  • Shredded lettuce
  • Sliced pickles

Instructions 

  • Heat a cast iron pan over high heat until very hot.
  • Divide beef into 4 equal balls.
  • Place each ball in the pan and press firmly to create thin patties.
  • Cook 2–3 minutes until edges are crispy.
  • Flip and immediately add cheese.
  • Cook another 1–2 minutes until melted.
  • Mix all sauce ingredients until smooth.
  • Stack patties and add sauce on top.
  • Add lettuce and pickles if using
